Cooking With My Girlfriend
Kale with Garlic & Ale
adapted from Rachael Ray’s recipe Kale with Garlic, Anchovies & Ale.
2-3 Tb olive oil
2-3 Tb soy sauce
1 tsp. red pepper flakes
3 to 4 cloves, minced
1 large bunch kale, stemmed and shredded
1 cup ale (about 3/4 a bottle - drink the rest!)
Ground nutmeg, salt and fresh ground black pepper
Heat olive oil in a small skillet over medium to medium-high heat, add red pepper flakes and garlic and cook 2 minutes. 
Stir in the kale and soy sauce.  Let the kale wilt, turning it in the oil with tongs.  
Douse the pan with ale, then toss 1-2 minutes more.  (I used Boulevard Pale Ale - use any beer you’ve got - make sure it’s something you like to drink. If you like to drink Natty Light… borrow a beer from your neighbor.)
Add nutmeg, salt and pepper and serve.
